DECADENT FLUFFY BANANA BREAD

INGREDIENTS

  • 1 1/2 cup flour

  • 2 teaspoons vanilla

  • 1 1/2 teaspoons baking powder

  • 1 cup sugar

  • 1/4 cup vegetable oil

  • 2 eggs

  • 1 1/4 cup water

  • 2 frozen ripe bananas

  • Garnish of your choice (blackberries, chocolate chunks/drizzle, etc.)


INSTRUCTIONS

  1. Preheat oven to 350ºF.

  2. Lay a sheet of parchment in your loaf pan.

  3. Mix together all the dry ingredients in a bowl.

  4. Add in water, eggs, and vanilla but don’t mix; just let sit while you prepare the bananas.

  5. Heat frozen ripe bananas for 3 minutes, then peel and mix the banana flesh in its own bowl until smooth.

  6. Add the banana to the dry ingredients, water, egg, and vanilla, and mix it all up!

  7. Fold in your garnishes (fruit or chocolate).

  8. Pour batter into parchment-lined loaf pan.

  9. Bake at 350ºF for 20-30 minutes (if the top is still too gooey for you, leave it in the oven for a few minutes after shutting off the heat and let the top bake a bit more).

  10. Finally, let cool and serve!
