Sourdough Strata.

While this simple breakfast dish is packed with protein and nutritious ingredients, the sourdough really is the star here. This naturally fermented bread is good for your gut health and easy to digest. It is lower in gluten than most breads and has a low glycemic index, meaning it won’t cause a spike in your blood sugar levels. Adding sourdough to your diet can even help to reduce inflammation in your body and help to improve overall health. It also tastes great!

SOURDOUGH STRATA

 

 

INGREDIENTS

  • 1 pound ground turkey or chicken

  • 1/4 cup finely chopped onion

  • 8 cups sourdough, cut into 1-inch cubes

  • 1 cup shredded cheese, divided

  • 1 cup frozen kale

  • 1/2 tablespoon minced garlic

  • 8 eggs

  • 2 cups milk

  • 1–2 teaspoons grainy mustard

  • 1–2 teaspoons Italian seasoning blend of herbs


INSTRUCTIONS

  1. Preheat the oven to 350°.

  2. Spray a 9" x 13" baking dish with avocado oil (or oil of choice).

  3. On medium-high heat, cook ground turkey in a skillet for 10 minutes. Add onion to skillet and cook for another 5 minutes or until onions are soft and turkey is browned.

  4. Place half the bread in a single layer in the prepared baking dish. Sprinkle with 1/2 cup of cheese and 1/2 cup of frozen kale. Layer with 3/4 of the ground turkey and onion. Top with remaining bread, kale, cheese, turkey, and onion.

  5. In a bowl, whisk eggs, milk, garlic, and mustard. Pour over bread. Bake immediately or refrigerate overnight.

  6. Bake for 50 minutes. Strata is done when golden brown and a knife inserted near the centre comes out clean. Let stand for 10 minutes before serving.
