BAKED SWEET POTATO PANCAKE

 

Bake as a yummy alternative for Thanksgiving breakfast. This recipe could also be your new favourite side dish to any savoury meal! Take a break from cornbread or give a sweet sidekick to your stews. Haleigh says she even enjoys this recipe with curry.

INGREDIENTS

  • 1 mashed or puréed sweet potato

  • 1 cup buttermilk pancake mix

  • 1/2 cup Greek yogurt (I use vanilla)

  • Maple syrup and salt to taste

  • 1 tablespoon of butter, plus more for serving

INSTRUCTIONS

  1. Pre-heat your oven to 350°F.

  2. Mix the prepared sweet potato, pancake mix, and yogurt together.

  3. Stir in maple syrup and sea salt to taste (I use about 2–3 tablespoons of syrup and a pinch of salt).

  4. Place batter on a parchment lined tray (see photo).

  5. Add a dollop of butter on top of the center (about 1 tablespoon).

  6. Drizzle with about 1 tablespoon of maple syrup.

  7. Bake for 15–20 minutes (or until crust develops).

  8. Let cool and slice.

  9. Serve with butter on top (optional).
