Let's be honest, sometimes salads can be a little...boring. Here's an idea to help spruce them up a little! Serving a salad family-style not only makes for a beautiful presentation, it also provides the opportunity for each person to customize their meal.
This option is great for those living with food restrictions, it works well for young children who may be learning about and exploring different foods, and for those who like to be creative with their food choices.
FAMILY STYLE SALAD
Starting with some warm and cold base choices, having a variety of fruits, veggies, and proteins, topped off with nuts, seeds, and other topping choices provides endless combinations that a family can enjoy.
For extra flavour, let’s start by preparing the spice rub and the salad dressing for your family-style salad.
CHICKEN SPICE MIX
INGREDIENTS
1 tsp paprika
1/2 tsp oregano
1/2 tsp garlic powder
1/2 tsp onion powder
1/4 tsp salt
1/4 tsp pepper
1/8 tsp chili powder
INSTRUCTIONS
Prepare the Chicken Spice Mix by combining all the ingredients together in a small bowl with a fork or small whisk. Set aside.
MAPLE DIJON DRESSING
INGREDIENTS
2 tbsp EVOO
1 tbsp plain greek yogurt
1/2 tbsp apple cider vinegar
1/2 tbsp pure maple syrup
1 tsp dijon mustard
1/8 tsp minced garlic
1/8 tsp kosher salt or sea salt
1/8 tsp pepper
INSTRUCTIONS
Prepare dressing by adding all ingredients to a mason jar, and shake to combine. Adjust the sweetness to suit your taste by adding more or less of the maple syrup. Set aside.
SALAD INGREDIENTS
Base options
Spinach (or other greens)
Quinoa
Riced Cauliflower
Veggies
Broccoli
Cauliflower
Sweet Bell Peppers
Cucumber
Shredded Carrot
Fruits/Berries
Blueberries
Strawberries
Cherry Tomatoes
Protein
Boneless, skinless chicken breast
Optional
Sunflower seeds
Roasted pumpkin seeds
Feta or other cheese
Avocado slices
Salad Dressing
Any other salad toppings you enjoy!
INSTRUCTIONS
Preheat oven to 375°F.
Rub a small amount of extra virgin olive oil onto chicken, and sprinkle with spice mixture you previously prepared.
Place in baking dish, cover with foil, and bake for 35-minutes.
Remove foil for the last 10-minutes. This time may vary depending on the weight and size of your chicken breasts.
Cook quinoa and riced cauliflower as per package directions.
Wash and chop veggies and berries.
Place all base ingredients in individual dishes.
Arrange veggies, berries, and chicken on serving platter.
Assemble individual salads.
Add salad dressing or additional toppings as desired.
Enjoy!
